At Crêpes Paulette, we don’t prepare your food behind a wall. It’s right behind the glass, the spinning, the sizzling, the folding…served in real time. Fast hands, hot griddles, and a rhythm we’ve been refining since day one.

No tricks. No gimmicks. Just the delicious satisfaction of watching something simple done really well.

Where It All Began

Crêpes Paulette started with a simple idea: make great food that feels special but not fancy, unique but still familiar.

We began with a food truck—small space, big learning curve, and a direct connection to our customers. That’s where we figured out what worked: speed matters, quality matters more, and people love food they can hold in their hands.

From there, we opened our first brick-and-mortar location in Bentonville. It gave us room to grow, refine our menu, and build a loyal following.

Next came Fayetteville—bringing the same concept to a new community, with the same commitment: fast, fresh, and made right in front of you.

Each step has been an evolution, but the core has stayed the same.

Why Handheld Crêpes

We believe food should fit your life—not slow it down.

A handheld crêpe is a full meal or special treat that doesn’t require a table, a knife, or a pause in your day. It’s portable, efficient, and satisfying—whether you’re grabbing lunch, walking downtown, or sitting down for a quick break.

But “handheld” doesn’t mean simple. Every crêpe is built to deliver a complete, balanced bite—flavor, texture, and temperature all working together.

It’s fast-casual, done with intention.

Why Buckwheat Crêpes

Our savory crêpes are made with buckwheat—and that choice is deliberate.

Buckwheat crêpes (traditional French galettes) bring a deeper, nuttier flavor that holds up to savory ingredients. They’re naturally gluten-free and vegan, but more importantly, they form the healthy and flavorful baset for what we’re building.

They’re sturdy enough to be handheld, flexible enough to fold perfectly, and distinctive enough to set us apart.

For sweet crêpes, we use a different batter—light, buttery, and crisp-soft.

Two crêpes. Two purposes. No confusion once you taste the difference.
